Sheet Pan Gnocchi and Tomato Bread

This no boil sheet pan gnocchi is an easy weeknight meal and goes great with the cheesy tomato bread.

Ingredients

    • 16 oz. (450 g) potato gnocchi
    • 8 oz. (250 g) chicken breasts (about 1 small breast), cut into bite-sized pieces
    • 4 oz. (125 g) asparagus, trimmed and cut into bite size pieces
    • ½ large tomato, diced
    • 2 cloves garlic, crushed
    • 1 lemon, zested and juiced
    • 1 green onion, thinly sliced
    • 2 tbsp (30 mL) butter, melted
    • ½ tsp (2 mL) salt
    • ½ tsp (2 mL) black pepper
    • ½ oz. (15 g) Parmesan cheese, finely grated (¼ cup/60 mL), plus additional for serving
    • Tomato Bread
    • ½ French baguette (8 oz./250 g)
    • 2 cloves garlic, crushed
    • ¼ cup (60 mL) butter, melted
    • ½ large tomato, sliced
    • 2 oz. (60 g) mozzarella cheese, grated (½ cup/125 mL)

Directions

  1. Toss all gnocchi ingredients, except the Parmesan and lemon juice, in a large bowl. Transfer the mixture to the Sheet Pan and spread into an even layer.
  2. Cut the baguette widthwise into 2 even pieces, then cut each piece in half lengthwise for a total of 4 pieces. Line the Air Fryer Rack with foil. Place the bread, cut-side up, on the foil.
  3. Set the Deluxe Air Fryer & Oven to SYNC FINISH. Set the Bottom Compartment to CONV. BAKE. Adjust the time to 25 minutes. Set the Top Compartment to BAKE. Adjust the temperature to 450°F (230°C) and the time to 13 minutes.
  4. Meanwhile, for the bread, add the garlic to the melted butter and stir to combine. Brush the garlic butter on the bread.
  5. Place 1–2 slices of tomato on each piece of bread and top with the shredded mozzarella.
  6. When the display says, “Add Food,” place the Sheet Pan in the Bottom (on the Wire Rack) and the Air Fryer Rack in the Top. Press START.
  7. Toss and rotate the gnocchi halfway through cooking.
  8. Squeeze the lemon juice over the top of the gnocchi and sprinkle with the Parmesan cheese. Toss to combine.
