Chicken & Stuffing Casserole

This delicious casserole is the definition of comfort food. It’s easy to put together, freezes well, and makes enough for the whole family.

Ingredients

    • 4 oz. (125 g) cream cheese
    • ½ cup (125 mL) sour cream
    • 2 tbsp (30 mL) cornstarch
    • 2 tsp (10 mL) Rotisserie Seasoning
    • 4 cups (1 L) chicken broth, divided
    • 2 lbs. (1 kg) boneless, skinless chicken thighs, cut into chunks
    • 1 bag (12 oz./350 g) frozen peas and carrots
    • ½ cup (125 mL) butter (1 stick), diced
    • 2 boxes (6 oz. each) or 260 g total stuffing mix, any flavor

Directions

  1. Preheat the oven to 400°F (200°C). Microwave the cream cheese in a large bowl for 30–45 seconds, or until very soft. Stir in the sour cream, cornstarch, and seasoning. Slowly whisk in 1 cup (250 mL) of the chicken broth. Pour the mixture into the 9" x 13" (23-cm x 33-cm) Brilliance Nonstick Baking Pan.
  2. Add the chicken and frozen vegetables to the pan and mix to combine. Bake the casserole, uncovered, for 45 minutes.
  3. Combine the remaining broth, butter, and stuffing mix in a large bowl and microwave for 5–6 minutes, or until the water is fully absorbed. Fluff with a fork.
  4. Stir the casserole gently before evenly topping with the stuffing. Bake for 15 minutes, or until the stuffing is slightly browned and the filling is bubbling.
